Mother-in-Law's Chocolate Cake

Ingredients

  • 200 g dark chocolate
  • 200 g butter
  • 200 g sugar
  • 100 g 00 flour
  • 4 eggs
  • 1 packet baking powder

Preparation

  1. Take a cake pan and line it with parchment paper. Preheat the oven to 180 °C so it heats up while you prepare the batter.
  2. Melt the chocolate in a double boiler or in the microwave, stirring until smooth and homogeneous. Let it cool slightly.
  3. In a bowl, cream the softened butter with the sugar until light and fluffy.
  4. Separate the yolks from the whites. Beat the whites to stiff peaks with a pinch of salt.
  5. Add the yolks to the butter and sugar mixture and stir until well combined.
  6. Incorporate the melted chocolate into the mixture and stir again.
  7. Sift the flour with the baking powder and add them to the batter little by little, mixing gently from top to bottom to avoid deflating it.
  8. Finally, gently fold in the beaten egg whites, trying to keep as much air as possible in the batter.
  9. Pour the batter into the prepared cake pan and level the surface.
  10. Bake the cake for about 30-35 minutes. Always do the toothpick test to ensure the cake is cooked just right: it should come out clean but not dry, because the cake should remain moist inside.
  11. Remove the cake from the oven and let it cool before removing it from the pan.
