No-Bake Coconut and Chocolate Cake

Ingredients
For the base:
- 200 g dry biscuits
- 100 g melted butter
For the coconut filling:
- 200 ml coconut milk
- 200 ml whipping cream
- 100 g sugar
- 150 g shredded coconut
- 12 g gelatin sheets (or fish glue)
For the chocolate ganache:
- 200 g dark chocolate
- 200 ml whipping cream
Preparation
Base
- Finely crush the dry biscuits in a food processor or place them in a bag and roll over them with a rolling pin until reduced to powder.
- In a bowl, combine the crushed biscuits and melted butter. Mix until you obtain a homogeneous mixture.
- Press the mixture into a springform pan lined with parchment paper, forming a compact base. Place in the fridge to cool for about 30 minutes.
Coconut filling
- Soak the gelatin sheets in cold water for about 10 minutes.
- In a saucepan, heat the coconut milk with the sugar without bringing to a boil. Squeeze the gelatin sheets and add them to the hot coconut milk, stirring until completely dissolved.
- Let the coconut milk and gelatin mixture cool slightly, then add the shredded coconut.
- Whip the very cold cream and gently fold it into the coconut milk mixture.
- Pour this filling over the cooled biscuit base and let it rest in the refrigerator for at least 4 hours, or until set.
Chocolate ganache
- Chop the chocolate and place it in a bowl.
- In a saucepan, bring the whipping cream to a boil and then pour it over the chopped chocolate.
- Stir until the chocolate has completely melted and you have a smooth, homogeneous ganache.
- Let the ganache cool to room temperature.
- Once the coconut cake in the fridge has set, pour the ganache over it and smooth the surface.
- Return the cake to the refrigerator and let the ganache set, which will take about 1-2 hours.
Once ready, you can decorate the cake with coconut flakes or dollops of whipped cream for an extra touch of elegance.
