No-Bake Yogurt Cake

The no-bake yogurt cake is a fresh and delicious dessert, perfect for hot days or for those looking for a lighter sweet alternative. Here is a basic recipe you can follow:

Ingredients

  • 250g dry biscuits (Digestive type)
  • 100g melted butter
  • 500g Greek yogurt
  • 100g icing sugar
  • 12g gelatin sheets (or agar agar if you prefer a plant-based option)
  • Juice of 1 lemon
  • Fresh fruit or fruit coulis for decoration (optional)

Preparation

  1. Start by crushing the dry biscuits until you obtain a coarse flour. Mix the crushed biscuits with the melted butter.
  2. Pour the biscuit and butter mixture onto the bottom of a springform pan and press it well to form a compact base. Place it in the fridge for at least 30 minutes to harden.
  3. Meanwhile, soak the gelatin in cold water to soften it.
  4. In a bowl, mix the Greek yogurt with the icing sugar and add the lemon juice.
  5. Heat some water in a saucepan and dissolve the squeezed gelatin, then add it to the yogurt mixture and stir well until you obtain a homogeneous mixture.
  6. Pour the mixture over the now solidified biscuit base and level it with a spatula.
  7. Place the cake in the fridge and let it cool for at least 4 hours, or until it is well set.
  8. Before serving, decorate the cake with fresh fruit or a fruit coulis of your choice.
