Oysters with Lemon and Pepper

Ingredients
- Fresh oysters (number as desired based on the number of diners)
- 1 organic lemon
- Freshly ground black pepper (to taste – as needed)
- Crushed or coarsely broken ice (optional, for serving)
Preparation
- First of all, make sure the oysters are very fresh. They should be tightly closed or close quickly if touched.
- Rinse the oyster shells well under cold running water to remove any residues or debris.
- Using a dedicated oyster knife, insert it at the point where the shell opens most easily, prying to separate the two valves. Always hold the oyster with a cloth to protect your hand and ensure a secure grip.
- Remove the top shell, detaching the oyster from the shell but leaving it in its lower shell with the liquid that surrounds it—that is its natural flavor.
- Arrange the oysters on plates over a bed of crushed ice so they stay cold and stable.
- Cut the lemon in half and then into wedges or thin slices.
- Serve the oysters with a lemon slice and invite your guests to squeeze the juice over the oyster before eating.
- Add a pinch of freshly ground black pepper over each oyster just before serving.
