Pasta with Sea Urchins and Tomatoes

Pasta with sea urchins and tomatoes is a delicious dish that combines the unique flavor of sea urchins with the freshness of tomatoes. Here’s how to prepare it:

Ingredients

  • 400 grams of long pasta (such as spaghetti or linguine)
  • 150-200 grams of sea urchin pulp
  • 250 grams of cherry or datterini tomatoes
  • 2 cloves of garlic
  • Fresh chopped parsley, to taste
  • Extra virgin olive oil, to taste
  • Chili pepper (optional)
  • Salt and pepper, to taste

Preparation

  1. Start by bringing a pot of salted water to a boil for the pasta. When it reaches a boil, cook the pasta al dente following the times indicated on the package.
  2. Meanwhile, wash the cherry tomatoes and cut them in half.
  3. Peel the garlic cloves and leave them whole or chop them finely, depending on your preference.
  4. In a large skillet, heat a drizzle of extra virgin olive oil and add the garlic (and the chili if you like a bit of spice), letting it sauté slowly to flavor the oil without burning it.
  5. Add the halved cherry tomatoes to the skillet and let them cook for a few minutes until they start to break down.
  6. Add the sea urchin pulp and let it warm gently with the tomatoes. If the sauce seems too thick, you can add a bit of pasta cooking water.
  7. When the pasta is al dente, drain it and transfer it to the skillet with the sea urchin and tomato sauce. Mix well to combine the ingredients.
  8. Add the fresh chopped parsley and adjust salt and pepper.
  9. Serve the pasta hot.
