Pasta with Stracchino, Bresaola and Cherry Tomatoes

I will be happy to help you with the recipe for a delicious pasta with stracchino, bresaola and cherry tomatoes. It is a simple yet flavorful dish that combines the elegance of bresaola with the creaminess of stracchino and the freshness of the cherry tomatoes. Here is the recipe:

Ingredients

  • 320 g of pasta of your choice (penne, farfalle or spaghetti work well)
  • 150 g of stracchino
  • 100 g of sliced bresaola
  • 200 g of cherry tomatoes
  • Extra virgin olive oil
  • Salt
  • Black pepper (optional)
  • Fresh basil for garnish (optional)
  • 1 garlic clove (optional)

Preparation

  1. Bring a large pot of salted water to a boil. When it reaches a rolling boil, cook the pasta according to the package directions until al dente.

  2. Meanwhile, wash the cherry tomatoes and halve or quarter them depending on size. You can sauté the tomatoes in a pan with a drizzle of oil and a garlic clove for a few minutes if you prefer to add some flavor, or leave them raw for extra freshness in the dish.

  3. Cut the bresaola into strips or pieces and set aside.

  4. In a large bowl, mash the stracchino with a fork to soften it and make it easy to combine.

  5. Drain the pasta, reserving some of the cooking water.

  6. Remove the garlic from the tomatoes if you chose to sauté them and add the pasta to the bowl with the stracchino.

  7. Add the tomatoes and bresaola. Stir gently, adding a couple of tablespoons of pasta cooking water to make the mixture creamier. Adjust the salt and, if desired, add a pinch of black pepper.

  8. Plate and garnish with fresh basil leaves, if desired.

  9. Serve immediately to preserve the creaminess and freshness of the ingredients.

Trivia

Bresaola, typical of Valtellina in Lombardy, is a salted and aged meat that is eaten raw. It pairs beautifully with the sweetness of stracchino and the acidity of the tomatoes, creating a very pleasant balance of flavors.

It is a dish that can be easily customized: for example, for a spicier note you could add some chili, or replace the stracchino with another soft, spreadable cheese according to your personal taste.
