Pea and Carrot Frittata

Ingredients
- 6 eggs
- 1 cup of peas (fresh or frozen)
- 2 medium carrots
- 1 small onion
- 2 tablespoons of extra virgin olive oil
- Salt and pepper to taste
- Grated Parmesan (optional, to add flavor)
- Aromatic herbs to taste (such as mint or basil, for a fresh touch)
Preparation
- Start by peeling and finely slicing the onion. Peel the carrots and cut them into thin slices or cubes, depending on your preference.
- In a non-stick pan, heat a tablespoon of extra virgin olive oil and sauté the onion until it becomes translucent.
- Add the peas and carrots to the pan and cook for a few minutes, until the vegetables are tender but still crunchy.
- Meanwhile, in a bowl, beat the eggs with a pinch of salt, pepper, and, if desired, a couple of tablespoons of grated Parmesan. If you have chosen to use aromatic herbs, finely chop them and incorporate them into the mixture.
- When the vegetables are ready, distribute them evenly in the pan and pour the egg mixture over them.
