Pea and Carrot Frittata

The pea and carrot frittata is a simple and nutritious dish, perfect for a quick lunch or a light dinner. Here are the ingredients to prepare a frittata for about 4 people:

Ingredients

  • 6 eggs
  • 1 cup of peas (fresh or frozen)
  • 2 medium carrots
  • 1 small onion
  • 2 tablespoons of extra virgin olive oil
  • Salt and pepper to taste
  • Grated Parmesan (optional, to add flavor)
  • Aromatic herbs to taste (such as mint or basil, for a fresh touch)

Preparation

  1. Start by peeling and finely slicing the onion. Peel the carrots and cut them into thin slices or cubes, depending on your preference.
  2. In a non-stick pan, heat a tablespoon of extra virgin olive oil and sauté the onion until it becomes translucent.
  3. Add the peas and carrots to the pan and cook for a few minutes, until the vegetables are tender but still crunchy.
  4. Meanwhile, in a bowl, beat the eggs with a pinch of salt, pepper, and, if desired, a couple of tablespoons of grated Parmesan. If you have chosen to use aromatic herbs, finely chop them and incorporate them into the mixture.
  5. When the vegetables are ready, distribute them evenly in the pan and pour the egg mixture over them.
  6. Let the frittata cook over medium-low heat, without stirring, until the egg starts to set on the edges.
  7. With the help of a lid or a plate, flip the frittata and cook it on the other side until it is well golden.
  8. Once cooked, transfer the frittata to a serving plate and let it cool for a few minutes before serving.

Trivia

The frittata is a very versatile dish that can be enriched in many ways. For example, you could add soft goat cheese for a bolder flavor or spices like turmeric for an exotic touch. In addition, the pea and carrot frittata is a great way to get even those who don’t particularly like vegetables to eat them!
