Peach Puff Pastry Tart

Ingredients
- 1 roll of rectangular puff pastry
- 4-5 fresh peaches (or canned in syrup if not in season)
- 2 tablespoons of granulated sugar
- 1 egg yolk for brushing
- Powdered sugar for decoration (optional)
Preparation
- Preheat the oven to 180 °C (350 °F).
- Roll out the puff pastry roll on a baking tray lined with parchment paper.
- Wash the peaches, cut them in half, remove the pit and then slice them thinly.
- Arrange the peach slices on top of the puff pastry, leaving about 2 cm of border free all around.
- Sprinkle the granulated sugar over the peaches.
- Slightly fold the edges of the pastry inward to contain the fruit during baking.
- Brush the edges of the pastry with the beaten egg yolk to give the tart a nice golden color.
- Bake the peach puff pastry tart for about 25-30 minutes or until the puff pastry is puffed and golden.
- Let it cool slightly before dusting with powdered sugar, if desired.
Serve the peach puff pastry tart warm or at room temperature. It is an excellent summer dessert, but if peaches are not in season, you can use those in syrup, well drained from excess liquid.
