Peanut Butter Muffins

Ingredients

  • 250 g of 00 flour
  • 100 g of sugar
  • 1 packet of baking powder
  • 1/2 teaspoon of salt
  • 2 large eggs
  • 120 ml of milk
  • 6 tablespoons of creamy peanut butter
  • 60 ml of seed oil (or extra virgin olive oil for an Italian touch)
  • 1 teaspoon of vanilla extract (optional)
  • 2-3 tablespoons of millefiori honey (to emphasize the sweetness, a typical Italian product)
  • Hazelnut or chopped peanut crumble (for finishing)

Preparation

  1. Preheat the oven to 180 °C and prepare a muffin tin by lining the individual compartments with paper liners.
  2. In a medium bowl, mix the flour, sugar, baking powder and salt.
  3. In another bowl, beat the eggs with the milk, peanut butter, seed oil (or extra virgin olive oil), vanilla extract (if used), and honey until you get a homogeneous mixture.
  4. Pour the liquid ingredients over the dry ones and mix with a spatula until the flour is no longer visible. Avoid mixing too much to keep the muffins soft and fluffy.
  5. Fill the liners about 2/3 of their height and sprinkle the surface with hazelnut crumble or chopped peanuts.
  6. Bake and cook for about 20-25 minutes or until the muffins are golden and, inserting a toothpick in the center, it comes out clean.
  7. Let the muffins cool in the pan for a few minutes and then transfer them to a wire rack to cool completely.

Peanut butter is a very popular ingredient in North America and is also winning over many Italians. Although it is a food with distant origins, it is interesting how well it lends itself to being used in pastry, especially combined with honey, which enhances its flavor deliciously.
