Piadina with Chocolate Cream and Fruit

Ingredients

For the piadina:

  • 500 g of 00 flour
  • 200 ml of lukewarm water
  • 50 ml of extra virgin olive oil
  • 10 g of salt
  • 1 teaspoon of baking soda (or 10 g of lard, if you prefer the traditional recipe)

For the chocolate cream:

  • 200 ml of whipping cream
  • 150 g of dark chocolate

For the garnish:

  • Fresh fruit to taste (e.g. strawberries, bananas, kiwi)
  • Powdered sugar (optional)

Preparation

For the piadina:

  1. In a large bowl, mix the flour with the salt and baking soda.
  2. Add the olive oil and start combining.
  3. Gradually add the lukewarm water and knead until you obtain a smooth and homogeneous dough.
  4. Let the dough rest for about 30 minutes covered with a cloth.
  5. Divide the dough into balls of about 100 g each.
  6. Roll out each ball with a rolling pin until you get a thin piadina.
  7. Cook the piadinas in a hot non-stick pan, about 2 minutes per side or until the typical bubbles form.

For the chocolate cream:

  1. Chop the dark chocolate into pieces.
  2. In a saucepan, heat half of the cream until it starts to simmer.
  3. Remove from the heat and add the dark chocolate, stirring until you obtain a smooth and glossy cream.
  4. Let the cream cool slightly and whip the remaining cream.
  5. Gently fold the whipped cream into the cooled chocolate cream to obtain a whipped ganache.

For the garnish:

  1. Cut the fresh fruit into small pieces or slices.

Assembly:

  1. Spread a generous amount of chocolate cream on half of the piadina.
  2. Add the cut fresh fruit on top of the cream.
  3. Fold the piadina in half and dust with powdered sugar if desired.

Serve immediately to enjoy the piadina with its crispiness and sweet, fresh filling.
