Piadina with Zucchini and Stracchino
17/11/2023Here is the recipe for a delicious piadina with zucchini and stracchino, a typically Italian filling that enhances the simple but rich flavors of our territory.
Ingredients
- 2 piadine (you can use ready-made ones or make them yourself with flour, water, salt and a pinch of baking soda)
- 2 medium zucchini
- 200 g of stracchino
- Salt to taste
- Pepper to taste
- Extra virgin olive oil
- (Optional) a few leaves of fresh mint or basil to add an aromatic touch
Preparation
- Wash the zucchini, cut them into thin rounds or strips, depending on your preferences.
- In a non-stick pan, heat a drizzle of extra virgin olive oil and cook the zucchini until they become tender and lightly golden. Adjust with salt and pepper during cooking.
- Heat a piadina in a pan or on a hot griddle, until it starts to become a bit crispy and takes on some color.
- Spread a generous amount of stracchino on half of the hot piadina, then adding the cooked zucchini.
- If you like, you can add a few mint or basil leaves for a fresher and more aromatic flavor.
- Close the piadina by folding it onto itself and leave it for another minute on the hot griddle or pan so that the cheese starts to melt slightly.
- Repeat the operation for the second piadina.
- Serve the piadina immediately, optionally cutting it in half to make it easier to eat.
