Pita with Eggplant and Chicken

I’ll be happy to help you! Here is a recipe that blends Mediterranean flavors with an Italian touch. The recipe for pita with eggplant and chicken is quite simple and full of flavor.

Ingredients

  • 2 chicken breasts
  • 2 medium eggplants
  • 4 pitas (pita bread)
  • 2 garlic cloves
  • Extra virgin olive oil
  • Juice of 1 lemon
  • Salt and pepper to taste
  • Dried oregano
  • Fresh pears (optional for a sweet twist)
  • 100g Greek yogurt
  • 1 tablespoon fresh chopped mint
  • 1 small red onion, thinly sliced
  • Arugula or salad as desired

Preparation

  1. Start with the chicken: cut the chicken breasts into strips, season them with salt, pepper, crushed garlic, lemon juice, and a bit of oregano. Let them marinate for about 30 minutes.

  2. While the chicken marinates, slice the eggplants lengthwise, brush the slices with olive oil, salt, and pepper, and grill on a hot griddle until they become soft and slightly charred on the edges.

  3. In a well-heated pan, cook the chicken until it is nicely golden and cooked through.

  4. Meanwhile, season the Greek yogurt with a pinch of salt, pepper, and the chopped mint to create a fresh sauce.

  5. Heat the pitas in the oven or on a griddle until they become slightly toasted and flexible.

  6. Now assemble your dish: open the pita and fill it with the chicken strips, grilled eggplant, red onion, arugula or the salad of your choice.

  7. Add a spoonful of the yogurt sauce on top and, if you like, some pear slices for a sweet contrast.

  8. Serve immediately.
