Ingredients
- 4 eggs
- 150 g of sugar

- 250 ml of whipping cream

Preparation
- Preheat the oven to 160 °C.
- Separate the yolks from the whites. In a bowl, beat the yolks with the sugar until you obtain a light and frothy mixture.
- Add the grated lemon zest to the yolk mixture.
- In a separate bowl, beat the egg whites to stiff peaks with a pinch of salt.
- Gently fold the beaten egg whites into the yolk mixture, using a spatula and bottom-to-top movements to avoid deflating the batter.
- Sift the flour, potato starch, and baking powder, then gently incorporate them into the batter.
- Pour the batter into a buttered and floured cake pan, level the surface well, and bake for about 40 minutes or until a toothpick inserted in the center of the cake comes out clean.
- Remove the cake from the oven and let it cool completely.
- Meanwhile, whip the cream with powdered sugar and vanillin until firm.
- Once the cake is cold, slice it horizontally into two layers. Fill with some of the whipped cream and cover with the second cake layer.
- Spread the remaining whipped cream over the top and sides of the cake.
