Plum Roll

Ingredients
- 230 g 00 flour
- 3 eggs
- 130 g granulated sugar
- 1 teaspoon vanilla extract
- 7 g baking powder
- 1 pinch of salt
- Milk, as needed
- 300 g dried prunes (or fresh plums if in season)
- 50 ml rum (optional)
- Powdered sugar for decoration
Preparation
- If using dried prunes, soak them in hot water for a few hours or, if short on time, in boiling water for about 30 minutes. If you choose to use rum, the dried ones can also be soaked in rum diluted with water to add an extra layer of flavor.
- Preheat the oven to 180 °C.
- Beat the eggs with the granulated sugar until light and frothy. Add the vanilla extract.
- In a separate bowl, mix the flour with the baking powder and the pinch of salt.
- Gently fold the dry ingredients into the egg mixture, adding milk if necessary to obtain a soft but not too liquid batter.
- Pour the batter onto a baking tray lined with parchment paper, leveling it into an even layer.
- Bake for about 10-15 minutes or until the surface is golden and a tester inserted comes out clean.
- Meanwhile, drain the prunes and, if necessary, cut them into small pieces. You could also cook them lightly in a saucepan with a little sugar to caramelize them.
- Once the cake is baked, turn it out onto a damp tea towel and dust it with powdered sugar.
- Spread the prunes over the surface of the cake.
- Using the tea towel, gently roll the cake onto itself to form a roll.
- Finish by dusting the roll with more powdered sugar and let it rest before slicing and serving.
