Pork Souvlaki

Pork souvlaki is a rustic and flavorful dish typical of Greek cuisine, perfect for a quick and tasty meal. Here is a simple version of the recipe:

Ingredients

  • 500 grams of pork (preferably chosen from lean cuts, such as the tenderloin),
  • 2 tablespoons of olive oil,
  • 1 tablespoon of lemon juice,
  • 2 cloves of garlic, minced,
  • 1 teaspoon of dried oregano,
  • 1/2 teaspoon of dried rosemary,
  • Salt and pepper to taste,
  • Bell peppers and onions (optionally cut into pieces, to thread onto the skewers),
  • Greek pita and tzatziki for serving.

Preparation

  1. Cut the pork into cubes of about 2-3 cm.
  2. In a bowl, prepare the marinade by mixing the olive oil, lemon juice, minced garlic, oregano, rosemary, salt, and pepper.
  3. Add the pork cubes to the bowl and mix well so that the meat is completely coated with the marinade. Let it marinate for at least 1 hour in the fridge, or even better overnight.
  4. If using wooden skewers, soak them in water for at least 30 minutes before use, to prevent them from burning during cooking.
  5. Prepare the skewers by threading the pork cubes (and alternating with peppers and onions if desired).
  6. Cook the souvlaki on a hot grill, turning the skewers occasionally, until the meat is nicely golden and cooked through (about 10-15 minutes).
  7. Serve the souvlaki hot accompanied by pita and tzatziki.
