Potato and Borlotti Bean Soup

Ingredients

  • 400 g of borlotti beans (fresh, dried soaked the night before, or canned)
  • 3-4 medium potatoes, peeled and cut into cubes

  • 1 celery stalk, chopped
  • 1 carrot, peeled and chopped
  • 1 garlic clove, chopped
  • 1 liter of vegetable or meat broth
  • 2 tablespoons of extra virgin olive oil
  • Salt and black pepper to taste
  • A sprig of fresh rosemary (optional)
  • Grated Parmesan for serving (optional)

Preparation

  1. In a large pot, heat the olive oil over medium heat. Add the onion, celery, and carrot and sauté until they become translucent, about 5 minutes.
  2. Add the garlic and sauté for another minute, until fragrant.
  3. Now add the potatoes and borlotti beans. If using dried beans that have been soaked, drain them before adding.
  4. Pour the broth into the pot and bring to a boil. If using rosemary, add it at this point.
  5. Reduce the heat, cover the pot, and let simmer until the potatoes and beans are tender. If using dried beans, this may take longer.
  6. Once the potatoes and beans are cooked, you can mash some potatoes with the back of a spoon to make the soup thicker and creamier, if desired.
  7. Taste and adjust the salt and pepper.
  8. Serve the soup hot, with a sprinkle of grated Parmesan, if you like.
