Preparation
- Start by peeling the potatoes and boiling them in salted water until soft. Drain and let them cool slightly.
- Meanwhile, preheat the oven to 180 °C and butter a baking pan, then sprinkle it with breadcrumbs.
- Mash the potatoes in a large bowl using a potato masher or fork to obtain a purée. Add the eggs, butter, Parmesan, salt, pepper, and nutmeg to taste. Mix well until you have a homogeneous mixture.
- Divide the potato mixture into two parts. Spread the first half on the bottom of the pan, creating an even layer.
- Distribute the cooked ham slices and the scamorza cheese, cut into slices or cubes, over the potato layer.
