Ingredients
- 400 g potatoes
- 200 g smoked salmon
- 1 small red onion
- 2 tablespoons capers in salt (rinsed and desalted)
- Juice of 1 lemon
- 4 tablespoons extra virgin olive oil
- Salt and pepper to taste
- Chopped parsley to taste
- (Optional) Some lettuce leaves for garnish
Preparation
- Start by boiling the potatoes: wash them and cook them in boiling salted water until they are tender but still firm. The time varies depending on the size of the potatoes, but usually around 20-30 minutes.
- Meanwhile, thinly slice the red onion and soak it in cold water with a pinch of salt to make it less pungent.
- Once cooked, drain the potatoes and let them cool. Then, peel them and cut into cubes or slices, depending on your preference.
- Drain the onion and pat it dry with paper towels.
- Cut the smoked salmon into strips or squares.
- In a large bowl, gently mix the potatoes, salmon, red onion, and capers.
- Prepare a simple emulsion with lemon juice, extra virgin olive oil, salt, and pepper. Emulsify everything with a whisk or fork until you get a homogeneous sauce.
- Pour the dressing over the potato and salmon salad and mix gently.
- Let the salad rest in the refrigerator for at least 30 minutes before serving, so that it absorbs all the flavors.
