Potato Quiche with Prosciutto and Cherry Tomatoes

Ingredients

  • 1 roll of shortcrust pastry (or puff pastry if you prefer a crispier base)
  • 2 medium potatoes
  • 150 g of cooked ham cut into cubes or strips

Preparation

  1. Preheat the oven to 180 °C.
  2. Wash your hands thoroughly and start by peeling the potatoes, then cut them into small cubes and boil them in salted water until they are soft but not falling apart.
  3. Meanwhile, roll out the shortcrust pastry into a quiche pan previously greased with a drizzle of oil, pricking the bottom with a fork to prevent it from puffing up during baking.
  4. When the potatoes are ready, drain them and let them cool slightly. Distribute them on the bottom of the shortcrust pastry along with the cubes of cooked ham.
  5. Cut the cherry tomatoes in half and arrange them on top of the potatoes and ham.
  6. Beat the eggs in a bowl, add the cream, grated cheese, salt, pepper and, if desired, a pinch of nutmeg. Mix well to obtain a homogeneous mixture.
  7. Pour the egg, cream and cheese mixture over the potato, ham and cherry tomato base, making sure to cover everything evenly.
  8. Bake the quiche for about 30-35 minutes or until the surface is golden and the pastry is cooked.
  9. Let it cool slightly for a few minutes before serving. Garnish with fresh basil leaves to add a touch of color and freshness.
