Potato Soup

Potato soup is a comforting dish that is simple to prepare. Here is a recipe to prepare a delicious Italian-style potato soup.

Ingredients

  • 500 grams of potatoes
  • 1 onion
  • 1 celery stalk
  • 1 carrot
  • 1 liter of vegetable broth
  • Salt and pepper to taste
  • Extra virgin olive oil
  • Chopped parsley (optional)
  • Grated parmesan (optional)

Preparation

  1. Start by peeling the potatoes and cutting them into cubes.
  2. Clean and finely slice the onion, carrot, and celery.
  3. In a large pot, sauté the onion in a drizzle of extra virgin olive oil until it becomes translucent.
  4. Add the carrot and celery to the soffritto and let cook for a few minutes.
  5. Add the potato cubes and mix well.
  6. Pour the vegetable broth into the pot and bring to a boil.
  7. Reduce the heat, cover the pot with a lid, and let cook for about 20-30 minutes or until the potatoes are tender.
  8. Using an immersion blender, blend part of the potatoes directly in the pot to thicken the soup, while still leaving some whole pieces for a more rustic texture.
  9. Taste and adjust the salt and pepper to your liking.
  10. If desired, you can add chopped parsley and grated parmesan when serving to enrich the flavor.

This soup can be customized in many ways: for example, for a heartier version you can add smoked pancetta cut into cubes and sautéed together with the soffritto. Enjoy your meal!
