Ingredients

  • 1 roll of rectangular puff pastry
  • 200 ml fresh cream
  • 100 g grated parmesan
  • 100 g speck fillets
  • Nutmeg to taste
  • Black pepper to taste
  • Salt to taste

Preparation

  1. Preheat the oven to 200 °C.
  2. Roll out the puff pastry and cut it into squares or rectangles of your preferred size.
  3. Place the puff pastry pieces on a baking tray lined with parchment paper and prick them lightly with a fork to prevent them from puffing up too much.
  4. Bake the puff pastry for about 10-15 minutes or until golden and crispy.
  5. While the pastry is baking, prepare the parmesan cream: pour the cream into a saucepan and heat over medium heat. Add the grated parmesan and let it melt completely, stirring continuously.
  6. Season the cream with a grating of nutmeg, salt and black pepper to taste.
  7. When the cream is smooth and homogeneous, remove from heat and let it rest for a few minutes.
  8. Once the pastries are ready, let them cool for a moment.
  9. Spread the parmesan cream on the surface of the now cooled pastries.
  10. Top each pastry with speck fillets arranged on the cream.
