Puff Pastry Potato Tart

Ingredients

  • 1 kg of potatoes
  • 2 rolls of puff pastry
  • 100 g of grated cheese (Parmesan or Pecorino)
  • 2 eggs
  • 100 ml of fresh cream
  • Salt and pepper to taste
  • Nutmeg to taste
  • Butter for greasing the pan

Preparation

  1. Start by peeling the potatoes and slicing them thinly. Cook them in boiling salted water for about 5 minutes, then drain and let them cool.
  2. Beat the eggs in a bowl, add the fresh cream, grated cheese, salt, pepper and a sprinkle of nutmeg, then mix well to obtain a homogeneous mixture.
  3. Take a baking pan (preferably round) and grease the bottom and sides with butter.
  4. Unroll the first roll of puff pastry and place it in the pan, creating a base that also covers the edges.
  5. Arrange a layer of potatoes over the puff pastry, then pour some of the egg and cream mixture on top.
  6. Continue making alternating layers of potatoes and egg mixture until all ingredients are used up.
  7. Close the puff pastry tart with the second roll of puff pastry and fold the edges inward to seal.
  8. Preheat the oven to 200 °C and, in the meantime, prick the surface of the tart with a fork to let steam escape during baking.
  9. Bake the puff pastry tart and cook for about 40-45 minutes or until the surface is golden and crispy.
  10. Let it cool slightly for a few minutes before serving.
