Puff Pastry Potato Tart

Ingredients
- 1 kg of potatoes
- 2 rolls of puff pastry
- 100 g of grated cheese (Parmesan or Pecorino)
- 2 eggs
- 100 ml of fresh cream
- Salt and pepper to taste
- Nutmeg to taste
- Butter for greasing the pan
Preparation
- Start by peeling the potatoes and slicing them thinly. Cook them in boiling salted water for about 5 minutes, then drain and let them cool.
- Beat the eggs in a bowl, add the fresh cream, grated cheese, salt, pepper and a sprinkle of nutmeg, then mix well to obtain a homogeneous mixture.
- Take a baking pan (preferably round) and grease the bottom and sides with butter.
- Unroll the first roll of puff pastry and place it in the pan, creating a base that also covers the edges.
- Arrange a layer of potatoes over the puff pastry, then pour some of the egg and cream mixture on top.
- Continue making alternating layers of potatoes and egg mixture until all ingredients are used up.
- Close the puff pastry tart with the second roll of puff pastry and fold the edges inward to seal.
- Preheat the oven to 200 °C and, in the meantime, prick the surface of the tart with a fork to let steam escape during baking.
- Bake the puff pastry tart and cook for about 40-45 minutes or until the surface is golden and crispy.
- Let it cool slightly for a few minutes before serving.
