Puff Pastry Zucchini Pumpkins

Ingredients

  • 1 roll of rectangular puff pastry
  • Zucchini pesto (about 2-3 depending on size)
  • Stringy cheese (for example, scamorza, mozzarella, or provola) cut into cubes
  • 1 egg yolk (to glaze the surface)
  • Salt, pepper and spices to taste (for example, oregano or thyme)

Preparation

  1. Preheat the oven to 180 °C.
  2. Roll out the puff pastry on a work surface and cut it into strips about 2-3 cm wide.
  3. Cut the zucchini into thin rounds or sticks, according to your preference.
  4. Prepare cheese cubes the same size as the zucchini.
  5. On each strip of puff pastry, place a zucchini round and a cheese cube.
  6. Season with salt, pepper and the chosen spices.
  7. Roll each strip onto itself, forming the little pumpkins.
  8. Place the little pumpkins on a baking tray lined with parchment paper.
  9. Beat the egg yolk and brush it over each little pumpkin to give a nice golden appearance.
  10. Bake the little pumpkins for about 20 minutes or until golden and crispy.
