Pumpkin Meatballs

Pumpkin meatballs are a delicious and healthy dish that you can easily prepare at home. Here is a basic recipe that you can follow, with an Italian twist:

Ingredients

  • 500 g of already cleaned pumpkin
  • 100 g of breadcrumbs
  • 50 g of grated parmesan
  • 1 egg
  • Chopped parsley to taste
  • Salt to taste
  • Pepper to taste
  • Nutmeg to taste
  • Olive oil for frying or baking

Preparation

  1. Cut the pumpkin into pieces and bake it in the oven at 180 °C for about 20 minutes, or until it becomes soft. You can also steam it if you prefer.
  2. Once cooked, mash the pumpkin with a fork or pass it through the food mill to reduce it to a puree.
  3. In a large bowl, mix the pumpkin puree with the breadcrumbs, parmesan, egg, chopped parsley and a pinch of salt, pepper and nutmeg (adjust the spices to your taste).
  4. When the mixture is homogeneous and compact, form meatballs the size of a walnut.
  5. You can choose to fry the meatballs in plenty of hot oil until golden or bake them in the oven at 200 °C until golden, about 20 minutes, turning them halfway through cooking for even browning.

For an even more Italian variation, you could also add some well-drained ricotta to the mix of ingredients, which will make your meatballs even softer and more succulent.
