Rice and Potato Soup
17/11/2023Rice and potato soup is a typically Italian dish, simple and comforting. Here’s the recipe:
Ingredients
- 200 g of rice
- 2 medium-sized potatoes
- 1 small onion
- Vegetable or chicken broth (about 1 liter, depending on the desired consistency)
- Extra virgin olive oil
- Salt and pepper to taste
- Grated Parmesan (optional)
- A sprig of rosemary (optional)
Preparation
- Peel and finely chop the onion. Peel and cut the potatoes into small cubes.
- In a large pot, add a drizzle of extra virgin olive oil and gently sauté the onion until it becomes translucent.
- Add the diced potatoes and cook for a few minutes, stirring occasionally.
- Add the rice to the pot and toast for about a minute, stirring.
- Start gradually adding the hot broth, continuing to stir. Add salt and pepper to taste and, if you like, a sprig of rosemary to flavor.
- Continue cooking, adding broth as the rice absorbs the liquid and stirring occasionally.
- When the rice is almost fully cooked and the potatoes are soft, adjust salt and pepper if necessary and remove the rosemary sprig.
- Serve hot with a sprinkle of grated Parmesan if desired.
Trivia
In some regions of Italy, a bit of cabbage cut into thin strips or other types of vegetables are also added to further enrich the flavor of the soup.
