Rice and Tuna Patties
17/11/2023Rice and tuna patties are a simple and tasty dish that can be served as an appetizer or as a light main course. Here is the recipe to prepare delicious patties:
Ingredients
- 200 g rice
- 200 g canned tuna in water
- 2 eggs
- 50 g grated Parmesan cheese
- Fresh chopped parsley (to taste)
- Salt and pepper (to taste)
- Breadcrumbs (for coating)
- Olive oil (for frying)
Preparation
- First, cook the rice in lightly salted water following the times indicated on the package, so that it is al dente.
- Drain the rice well and let it cool.
- Meanwhile, drain the tuna and mash it coarsely with a fork to make it easier to work with.
- In a large bowl, mix the cooked rice with the tuna, eggs, grated Parmesan, chopped parsley, salt and pepper to your taste.
- Form small patties with the mixture, pressing well with your hands to make them hold together.
- Coat the patties in breadcrumbs until evenly covered.
- In a pan, heat plenty of olive oil and fry the patties until golden brown on both sides.
- Let the patties drain on paper towels to remove excess oil.
- Serve the patties hot or at room temperature, as desired.
If you prefer a lighter version, you can bake the rice and tuna patties in the oven, placing them on a baking tray lined with parchment paper and baking at 180 °C for about 20 minutes or until desired browning.

Rice and tuna patties can be enriched with the addition of finely chopped vegetables, such as zucchini or carrots, or aromatic herbs like basil, for a fresh and colorful touch. Moreover, they are a great way to use leftover rice, transforming it into a new and appetizing dish.
