Ricotta and Chocolate Cake

The ricotta and chocolate cake is a delicious dessert that combines the creaminess of ricotta with the sweetness of chocolate. Here is the recipe:

Ingredients

  • 250 g ricotta
  • 150 g sugar
  • 3 eggs
  • 100 g dark chocolate
  • 70 g 00 flour
  • 50 g butter
  • 1 packet vanillin or one teaspoon vanilla extract
  • A pinch of salt
  • Powdered sugar (for decorating, optional)

Preparation

  1. Preheat the oven to 180 °C and butter and flour a cake pan about 22 cm in diameter.
  2. Separate the yolks from the whites and set the latter aside.
  3. In a bowl, beat the yolks with the sugar until you obtain a light and frothy mixture.
  4. Add the ricotta to the yolk and sugar mixture, incorporating well.
  5. Melt the chocolate in a double boiler or in the microwave at low power, then let it cool slightly.
  6. Add the melted chocolate to the ricotta mixture and stir until you obtain a homogeneous batter.
  7. Add the sifted flour, the vanillin or vanilla extract, and a pinch of salt, mixing gently.
  8. Whip the egg whites to stiff peaks and gently fold them into the mixture without deflating them.
  9. Pour the batter into the prepared pan and level the surface.
  10. Bake for about 35-40 minutes or until a toothpick inserted in the center of the cake comes out clean.
  11. Let the cake cool in the pan, then unmold it onto a serving plate and, if desired, dust with powdered sugar before serving.
