Rustic Potato Pie

Ingredients

  • 1 kg potatoes
  • 300 g flour
  • 200 g cooked ham, cubed
  • 150 g mozzarella or scamorza, cubed
  • 100 g grated Parmesan
  • 4 eggs
  • 100 ml milk
  • Nutmeg, to taste
  • Salt and pepper, to taste
  • Butter for greasing the pan
  • Breadcrumbs for sprinkling the pan

Preparation

  1. Start by peeling the potatoes and cutting them into cubes. Cook them in a pot with salted water until tender. Then, drain and mash them with a potato masher or fork until you obtain a puree.

  2. Preheat the oven to 180 °C.

  3. In a large bowl, mix the mashed potatoes with the cooked ham, mozzarella or scamorza, grated Parmesan, eggs, milk, a pinch of nutmeg, salt and pepper until you obtain a homogeneous mixture.

  4. Grease a high-sided pan and sprinkle it with breadcrumbs. Pour the potato mixture into the pan and level the surface with a spoon or spatula.

  5. Bake for about 45-60 minutes or until the surface of the pie is golden and crispy.

  6. Let the rustic potato pie rest for a few minutes before serving, so that it sets slightly.

This pie can be served both as a main dish and as a rich side, ideal for accompanying grilled meat or vegetables.
