Salmon Hamburger

Ingredients
- 500 g fresh salmon
- 1 egg
- 2 tablespoons breadcrumbs
- 2 tablespoons grated cheese (Parmesan or Pecorino)
- 1 small onion, finely chopped
- 2 tablespoons chopped chives
- Salt and pepper to taste
- Extra virgin olive oil for cooking
Preparation
- Start by removing the skin and any bones from the fresh salmon. Then, cut the salmon into small cubes or coarsely chop it with a knife. It is important not to chop the fish too finely to maintain some texture.
- In a bowl, combine the chopped salmon, egg, breadcrumbs, grated cheese, chopped onion, and chives. Add salt and pepper to taste.
- Mix all the ingredients well until you obtain a homogeneous mixture. If necessary, add more breadcrumbs to achieve the right consistency.
- Form hamburgers with the mixture, using wet hands to prevent sticking.
- Heat a drizzle of olive oil in a non-stick pan and, once hot, cook the salmon hamburgers for about 3-4 minutes per side or until golden brown and cooked to the desired doneness.
- Drain on paper towels to remove excess oil before serving.
