Savory Phyllo Pie

Ingredients

  • 1 package of phyllo dough
  • 200 g fresh or frozen spinach
  • 200 g ricotta
  • 100 g crumbled feta
  • 2 eggs

Preparation

  1. Preheat the oven to 180 °C.
  2. If using frozen spinach, thaw and squeeze it to remove excess water. If using fresh spinach, cook it briefly in a pan with a drizzle of oil until wilted.
  3. In a bowl, mix the spinach with the ricotta and feta. Add the eggs. Season with salt, pepper, and a grating of nutmeg. Mix the mixture until you obtain a homogeneous filling.
  4. Take a round pan or baking dish and grease it with a little oil or melted butter.
  5. Arrange a layer of phyllo dough on the bottom of the pan, letting the edges hang over the sides. Brush with oil or butter, then add another layer of dough. Continue this way for about 4-5 layers, each brushed with oil or butter.
  6. Pour the spinach and cheese filling onto the phyllo dough base and level it with a spoon.
  7. Fold the edges of the phyllo dough towards the center to close the pie, brushing again with oil or butter to make the dough adhere.
  8. You can add a couple of layers of phyllo dough on top of the filling to close everything, always brushing with oil or butter.
  9. Bake and cook for about 30-40 minutes or until the phyllo dough is golden and crispy.
  10. Let it cool slightly before serving.
