Savory Zucchini and Prosciutto Tart

I can help you with the recipe for the savory zucchini and prosciutto tart. It’s a simple and tasty dish, perfect for a light lunch or for a buffet. Here’s how to prepare it.

Ingredients

  • 1 roll of ready-made puff pastry or brisée
  • 3 medium zucchinis
  • 150 g of sliced cooked ham
  • 200 ml of fresh cream or milk to make the filling lighter
  • 3 eggs
  • 100 g of grated cheese (Parmesan, Pecorino or your preference)
  • Salt and pepper to taste
  • Extra virgin olive oil
  • Butter for greasing the pan
  • Breadcrumbs (optional)

Preparation

  1. Start by washing and cutting the zucchinis into rounds or sticks, as you prefer.
  2. Heat a drizzle of oil in a pan and sauté the zucchinis until they become lightly golden. Lightly salt them and set aside.
  3. In a bowl, beat the eggs with the cream or milk. Add the grated cheese, salt and pepper and mix well to combine all the ingredients.
  4. Take a baking pan, grease it with a little butter and spread the puff pastry or brisée on the bottom, pricking it with a fork. If you like, you can sprinkle some breadcrumbs on the bottom to absorb excess moisture.
  5. Distribute the cooked ham over the puff pastry.
  6. Arrange the cooked zucchinis over the ham.
  7. Pour the egg and cream mixture over the zucchinis, making sure it distributes evenly.
  8. Bake in a preheated oven at 180 °C for about 35-40 minutes or until the surface is golden and the filling is well cooked.
  9. Let it cool slightly before serving.

Trivia

The savory tart, a specialty also in Italy known as “quiche” in France, has the enormous advantage of being extremely versatile, allowing you to add ingredients to your liking or whatever you have available in the fridge, such as other types of vegetables, cheeses or cold cuts.

I recommend trying this savory tart both hot and cold, it’s excellent in both ways and lends itself very well to being transported for a picnic or an outing. Enjoy your meal!
