Shrimp Crepes

Ingredients
For the crepes:
- 125 g flour
- 250 ml milk
- 2 eggs

- Extra virgin olive oil
- Salt and pepper to taste
For the Italian-style béchamel:
- 30 g butter
- 30 g flour
- 500 ml milk
- Salt, pepper, nutmeg

Let’s start with preparing the crepes: in a bowl mix the flour with the milk, the eggs and a pinch of salt, until you get a smooth and homogeneous mixture. Let the batter rest for about 20 minutes at room temperature.

Meanwhile, prepare the shrimp filling. In a pan, heat a drizzle of oil and a clove of garlic. Add the shrimp and sauté them until they turn pink. Season with salt and pepper and sprinkle with chopped parsley. Let them cool slightly.

Prepare the Italian-style béchamel: melt the butter in a saucepan, add the flour and whisk quickly to avoid lumps. Pour in the milk little by little, continuing to stir. Add salt, pepper and a grating of nutmeg. Cook over medium heat until you get a thick and smooth cream, then remove from heat.

Combine the shrimp with the béchamel, stirring gently so as not to break them.

Cook the crepes: heat a non-stick pan and add a small piece of butter. Pour in a ladle of batter and rotate the pan to distribute it evenly. Cook each crepe for about 1 minute per side, until lightly golden.

Fill each crepe with the shrimp and béchamel mixture, then fold them into quarters or roll them up.

Serve the shrimp crepes hot, perhaps with an additional spoonful of béchamel on top and a sprinkle of fresh parsley.
