Shrimp Salad
17/11/2023Shrimp salad is a fresh and light dish, ideal as an appetizer or as a main course if enriched with other ingredients. Here’s how to prepare a delicious Italian-style shrimp salad:
Ingredients
- 200 g of already peeled and cleaned shrimp
- 100 g of arugula or a mix of tender lettuces
- 10 cherry tomatoes
- 1 ripe avocado
- The juice of half a lemon
- Extra virgin olive oil to taste
- Salt and pepper to taste
- 1 garlic clove (optional)
Preparation

If the shrimp are not already cooked, cook them in boiling salted water for about 2-3 minutes, until they turn pink. Then, drain and let them cool.

Meanwhile, wash and dry the arugula or chosen lettuce and arrange it as a base in a bowl or on a serving plate.

Wash the cherry tomatoes and cut them in half or into quarters, depending on size, then add them to the salad.

Cut the avocado in half, remove the pit, scoop out the flesh with a spoon and cut it into cubes or thin slices. Dress the avocado with a little lemon juice to prevent oxidation and browning.

Add the cooled shrimp to the bowl with the salad.

If you decide to use garlic, you can prepare an emulsion by lightly sautéing a garlic clove in the oil and then letting it cool slightly, or simply whisk the oil with the remaining lemon juice, salt and pepper in a small bowl, then pour it over the salad.

Gently toss the shrimp salad to combine the ingredients.

Taste and adjust salt and pepper if necessary, then serve immediately to enjoy the freshness of the dish.
