Spaghetti with Sea Urchins

Preparation

  1. Clean the sea urchins by opening them and extracting the edible internal part; do this carefully so as not to damage the coral. Remember that regulations for collecting sea urchins may vary by region and season, so make sure to respect them if you decide to collect them yourself.

  2. In a large pan, heat a drizzle of extra virgin olive oil and add the whole garlic clove. If you want to add some spice, add some chili pepper as well.

  3. Add the sea urchin corals to the pan and let them cook for a few minutes, just enough time to flavor the oil. Do not cook them too long so as not to lose their delicate flavor.

  4. Meanwhile, cook the spaghetti in plenty of salted water following the times indicated on the package to achieve an al dente cooking.

  5. Drain the spaghetti and transfer them to the pan with the sea urchin seasoning. Toss everything together for a few moments, mixing well to combine the spaghetti with the sauce.

  6. Sprinkle with fresh chopped parsley and, if necessary, adjust the salt.

  7. Serve immediately, to best enjoy the intense and unique taste of sea urchins.
