Stringy Baked Frittata

Here is the recipe for a delicious stringy baked frittata, which is a tasty variant of the traditional Italian frittata.

Ingredients

  • 6 eggs
  • 100 g stringy cheese (for example, Asiago, Fontina or Mozzarella)
  • 50 g grated Parmesan
  • Salt, to taste
  • Black pepper, to taste
  • A pinch of nutmeg (optional)
  • 2 tablespoons of milk
  • 1 tablespoon of extra virgin olive oil or butter to grease the baking dish

Preparation

  1. Preheat the oven to 180 °C.
  2. Grease a baking dish with a tablespoon of extra virgin olive oil or butter, making sure to cover the edges as well.
  3. In a large bowl, beat the eggs with a whisk or fork until you obtain a homogeneous mixture.
  4. Add the milk, grated cheese, salt, pepper and, if desired, a pinch of nutmeg. Mix well to distribute the ingredients evenly.
  5. Cut the stringy cheese into cubes or strips and add it to the mixture.
  6. Pour the egg mixture into the greased baking dish and level with a spatula.
  7. Bake the frittata and cook for about 20-25 minutes, or until golden on the surface and well cooked in the center.
  8. Once ready, remove the frittata from the oven and let it cool for a few minutes before slicing and serving.

This frittata is particularly tasty thanks to the stringy cheese that, once in the oven, melts creating a very inviting effect. You can serve it both as a main dish and as a second course, perhaps accompanied by a fresh seasonal salad.
