Summer Zucchini Pizzettes

Zucchini pizzettes are a light and summery alternative to classic mini pizzas. Here is the recipe for delicious zucchini pizzettes.

Ingredients

  • 2 large zucchinis
  • 200 grams of mozzarella (or other cheese that melts well)
  • 100 grams of cherry tomatoes
  • Dried oregano to taste
  • Extra virgin olive oil to taste
  • Salt and pepper to taste
  • Fresh basil (optional)
  • (Optional ingredients to add more flavor, such as olives, anchovies, capers, peppers, etc.)

Preparation

  1. Wash the zucchinis and cut them into round slices about 1 cm thick.
  2. Arrange the zucchini slices on a baking tray lined with parchment paper and season with a drizzle of extra virgin olive oil, salt, and pepper.
  3. Bake the zucchinis in a preheated oven at 200 °C for about 10-15 minutes, until lightly golden.
  4. Meanwhile, halve the cherry tomatoes and cut the mozzarella into cubes or thin slices.
  5. Once the zucchinis are cooked, remove from the oven and assemble your pizzettes: place some mozzarella on each slice and a few tomato halves.
  6. Sprinkle with a pinch of dried oregano and, if desired, add any other ingredients you like.
  7. Return the pizzettes to the oven for another 5 minutes or until the mozzarella has melted well.
  8. Remove the zucchini pizzettes from the oven and, if desired, garnish with fresh basil leaves before serving.
