Sweet Abruzzese Scrippellette

Scrippelle ‘mbusse are a typical Abruzzese preparation, often served as an appetizer or first course. There are also sweet variants called “scrippellette,” which are more similar to sweet crêpes and can be served as a dessert. Here is the recipe for sweet Abruzzese scrippellette:

Ingredients

  • 3 eggs
  • 150 g of 00 flour
  • 300 ml of milk
  • 2 tablespoons of sugar
  • A pinch of salt
  • Grated zest of lemon or orange (to taste)
  • Butter for greasing the pan
  • Powdered sugar for decoration (optional)
  • Jam or Nutella for filling (optional)

Preparation

  1. In a bowl, beat the eggs with the sugar and a pinch of salt until you obtain a frothy mixture.
  2. Add the sifted flour a little at a time, alternating with the milk, to avoid lumps, until you obtain a smooth and homogeneous batter.
  3. Add the grated zest of lemon or orange to give a delicate aroma to the batter.
  4. Let the batter rest for about 30 minutes at room temperature.
  5. Heat a non-stick pan and lightly grease it with a little butter.
  6. Pour a ladle of batter into the hot pan and tilt it to distribute the mixture evenly, aiming for a thin scrippella.
  7. Cook each scrippella for about one minute per side or until golden.
  8. Transfer the cooked scrippella to a plate and continue with the rest of the batter.
  9. You can serve the scrippellette plain or rolled with jam or Nutella inside.

Sweet scrippellette can be enhanced with a dusting of powdered sugar on top for a final sweet and refined touch.
