Sweet Abruzzese Scrippellette
17/11/2023Scrippelle ‘mbusse are a typical Abruzzese preparation, often served as an appetizer or first course. There are also sweet variants called “scrippellette,” which are more similar to sweet crêpes and can be served as a dessert. Here is the recipe for sweet Abruzzese scrippellette:
Ingredients
- 3 eggs
- 150 g of 00 flour
- 300 ml of milk
- 2 tablespoons of sugar
- A pinch of salt
- Grated zest of lemon or orange (to taste)
- Butter for greasing the pan
- Powdered sugar for decoration (optional)
- Jam or Nutella for filling (optional)
Preparation
- In a bowl, beat the eggs with the sugar and a pinch of salt until you obtain a frothy mixture.
- Add the sifted flour a little at a time, alternating with the milk, to avoid lumps, until you obtain a smooth and homogeneous batter.
- Add the grated zest of lemon or orange to give a delicate aroma to the batter.
- Let the batter rest for about 30 minutes at room temperature.
- Heat a non-stick pan and lightly grease it with a little butter.
- Pour a ladle of batter into the hot pan and tilt it to distribute the mixture evenly, aiming for a thin scrippella.
- Cook each scrippella for about one minute per side or until golden.
- Transfer the cooked scrippella to a plate and continue with the rest of the batter.
- You can serve the scrippellette plain or rolled with jam or Nutella inside.
Sweet scrippellette can be enhanced with a dusting of powdered sugar on top for a final sweet and refined touch.
