Sweet Potatoes with Cheddar and Bacon
17/11/2023Sweet potatoes with cheddar and bacon are a hearty and flavorful dish that can be served both as a side and as a main course. Here is the recipe to prepare this tasty dish.
Ingredients
- 4 medium sweet potatoes
- 150 g diced bacon
- 150 g grated cheddar cheese
- 2 tablespoons extra virgin olive oil
- 1 small onion, finely chopped
- Salt and pepper to taste
- Chopped chives, for garnish (optional)
Preparation
- Preheat the oven to 200 °C.
- Wash the sweet potatoes well and dry them. Using a fork, prick the skin of the potatoes in several places.
- Wrap each potato in aluminum foil and bake for about 45 minutes or until tender to the touch.
- Meanwhile, heat a pan over medium heat and cook the bacon cubes until crispy. Remove them and set aside on a plate lined with paper towels.
- In the same pan, add the chopped onion and cook it with the olive oil until golden and soft.
- Once cooked, remove the potatoes from the oven and be careful not to burn yourself when removing the foil. Cut the potatoes in half lengthwise and carefully scoop out some of the flesh to create a kind of “boat”.
- Mash the removed potato flesh and mix it with the golden onion, crispy bacon, and half of the cheddar cheese. Season with salt and pepper to your taste.
- Fill the potato skins with the mixture, sprinkle with the remaining cheddar, and bake again for about 10 minutes, or until the cheese has melted and taken on a light golden color.
- Garnish with chopped chives before serving, if desired.
