Three Tomato Soup

Three Tomato Soup is a dish that combines different types of tomatoes to create a rich and varied taste experience. Here’s how to prepare it:

Ingredients

  • 250 g ripe tomatoes
  • 150 g cherry tomatoes
  • 150 g datterini tomatoes
  • 1 medium onion
  • 2 garlic cloves
  • 1 liter vegetable broth
  • A few basil leaves
  • Extra virgin olive oil
  • Salt and pepper to taste
  • Grated Parmesan (optional)
  • Bread croutons (optional)

Preparation

  1. Wash all the tomatoes and cut the ripe tomatoes into chunks, halve the cherry tomatoes and leave the datterini whole.
  2. Peel the onion and chop it finely, then chop the garlic as well.
  3. In a large saucepan, heat some extra virgin olive oil and sauté the onion and garlic until they become translucent.
  4. Add the ripe tomatoes and cook for about 5 minutes.
  5. Pour the vegetable broth into the saucepan and bring to a boil.
  6. Add the cherry tomatoes and datterini, then lower the heat and let simmer for about 20 minutes.
  7. Add salt and pepper to taste, and the torn basil leaves.
  8. You can choose to serve the soup as is for a more rustic version with tomato pieces, or blend with an immersion blender for a smoother consistency.
  9. Serve hot, perhaps with a sprinkle of Parmesan and toasted bread croutons to add crunch.
