Torrone with Wafers

Wafer torrone is a delicious variation of classic torrone, which adds a pleasant contrast of textures thanks to the addition of crunchy wafers. Here’s how to prepare this delightful sweet.

Ingredients

  • 300 g dark chocolate
  • 100 g milk chocolate
  • 200 g toasted hazelnuts
  • 100 g wildflower honey
  • 30 g butter
  • 200 g hazelnut wafers (or plain wafers)
  • a pinch of salt

Preparation

  1. Start by toasting the hazelnuts in the oven at 160 degrees for about 10 minutes, then let them cool and remove the skins by rubbing them between your hands.
  2. Melt the dark chocolate and milk chocolate cut into pieces in a double boiler, then add the butter and honey, stirring until you obtain a homogeneous mixture. Add a pinch of salt to enhance the flavor.
  3. Roughly chop the hazelnuts and add them to the melted chocolate.
  4. Prepare a loaf pan by lining it with parchment paper (you can also use a disposable aluminum container).
  5. Pour a first layer of chocolate and hazelnuts into the pan and then place a layer of wafers. Continue alternating layers until the ingredients are used up, finishing with the chocolate.
  6. Let the wafer torrone cool for a few hours; it’s best to let it rest in the refrigerator overnight to allow the chocolate to solidify properly.
  7. Once the torrone is well cooled, remove it from the pan and cut it into slices to serve.
