Tortillas with Spiced Pork and Yogurt Guacamole

Ingredients for the spiced pork:

  • 500 g pork loin
  • 1 tablespoon paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon chili powder (optional)
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • 2 tablespoons extra virgin olive oil

Ingredients for the yogurt guacamole:

  • 2 ripe avocados
  • 1/2 red onion, finely chopped
  • 1 tomato, seeded and chopped
  • 1 tablespoon chopped fresh cilantro (or parsley if preferred)
  • Juice of 1 lime
  • 2 tablespoons Greek yogurt (or 100% natural yogurt)
  • Salt and pepper to taste

  • Green leafy lettuce for serving
  • Grated cheese (optional)

Preparation

For the spiced pork:

  1. Cut the pork loin into strips.
  2. In a bowl, mix the paprika, cumin, oregano, chili powder, garlic, salt and pepper.
  3. Coat the meat in the spice mix and let it marinate for at least 15 minutes.
  4. Heat the oil in a skillet over medium-high heat and cook the pork until golden and cooked through.

For the yogurt guacamole:

  1. Halve the avocados, remove the pit and scoop out the flesh with a spoon.
  2. In a bowl, mash the avocado with a fork to your desired consistency—rustic with chunks or smooth and creamy.
  3. Add the chopped red onion, tomato, cilantro (or parsley), lime juice, and yogurt. Season with salt, pepper and a drizzle of extra virgin olive oil, then mix well.

For assembling the tortillas:

  1. Warm the tortillas according to the package instructions.
  2. Place some spiced pork, yogurt guacamole and, if desired, leafy greens and a little grated cheese in the center of each tortilla.
  3. Fold or roll the tortillas as you prefer.
