Vanilla and Chocolate Mousse Cake

Ingredients

For the chocolate base:

  • 200 g chocolate biscuits
  • 100 g melted butter

For the chocolate mousse:

  • 200 g dark chocolate
  • 3 egg yolks
  • 2 tablespoons sugar
  • 250 ml whipping cream

For the vanilla mousse:

  • 200 ml whipping cream
  • 1 vanilla pod (or 1 teaspoon vanilla extract)
  • 3 egg yolks
  • 2 tablespoons sugar
  • 3 gelatin sheets (or equivalent powdered gelatin)

Preparation

  1. Start with the chocolate base. Finely crush the biscuits and mix them with the melted butter until you obtain a homogeneous mixture. Spread the mixture in a springform pan, pressing well on the bottom. Place in the fridge to set for at least 30 minutes.

  2. Prepare the chocolate mousse. Melt the chocolate in a double boiler and let it cool slightly. In a bowl, beat the egg yolks with the sugar until light and fluffy. Gently fold the melted chocolate into the yolks. In another bowl, whip the cream until stiff and fold it into the chocolate mixture. Pour the mousse over the biscuit base and refrigerate to set for about 1 hour.

  3. While the chocolate mousse sets, prepare the vanilla mousse. Soak the gelatin sheets in cold water for about 10 minutes. Whip the cream and set aside. In a saucepan, gently heat some cream with the vanilla pod split in half (or with the vanilla extract) and the scraped seeds. In a bowl, beat the egg yolks with the sugar, then add the warm vanilla cream. Place the mixture over low heat and warm until it thickens slightly, without boiling.

  4. Squeeze the soaked gelatin and dissolve it in the warm vanilla mixture. Let it cool slightly, then gently fold in the whipped cream. Pour the vanilla mousse over the now-set chocolate layer and refrigerate for at least 4 hours or until fully set.

  5. Before serving, you can decorate the mousse cake with chocolate shavings, fresh fruit, or dollops of whipped cream.
