Vanilla and Strawberry Roll

Ingredients

  • 4 eggs
  • 120g sugar
  • 120g 00 flour
  • 1 teaspoon vanilla extract
  • 250ml whipping cream
  • 2 tablespoons powdered sugar (plus some for dusting)
  • 300g fresh strawberries
  • Powdered sugar for decorating (optional)

Preparation

  1. Preheat the oven to 180 °C and line a baking tray with parchment paper.
  2. In a large bowl, beat the eggs with the sugar until light and fluffy. This may take about 5-7 minutes with an electric mixer.
  3. Gently fold the sifted flour and vanilla extract into the egg and sugar mixture, being careful not to deflate the batter.
  4. Pour the batter into the prepared tray and level it with a spatula.
  5. Bake for about 8-10 minutes, or until golden and a tester inserted in the center comes out clean.
  6. Meanwhile, lay a sheet of parchment paper on a flat surface and lightly dust it with powdered sugar.
  7. When the roll base is ready, turn it out onto the sugared parchment paper. Carefully remove the parchment paper it was baked in.
  8. Roll up the base with the parchment paper, starting from the short side, and let it cool completely.
  9. While the base cools, whip the cream with the two tablespoons of powdered sugar until light and stiff.
  10. Clean the strawberries and cut them into pieces.
  11. When the base is cold, gently unroll it and spread the whipped cream over it. Distribute the chopped strawberries evenly.
  12. Roll the base up again with the cream and strawberry filling, without the parchment paper.
  13. Refrigerate the roll for at least an hour before serving.
  14. Before serving, dust the roll with an additional veil of powdered sugar, if desired, and decorate with fresh strawberries.
