Vegan Coconut Cake
17/11/2023Here’s a simple recipe for a delicious and easy-to-prepare vegan coconut cake.
Ingredients
- 200 g wheat flour (or oat flour if you prefer a gluten-free version)
- 150 g brown sugar (you can also use agave syrup or other sweetener to taste)
- 50 g dehydrated coconut
- 1 packet of baking powder
- 100 ml coconut oil (melted)
- 250 ml coconut milk
- 1 teaspoon vanilla extract (optional)
- A pinch of salt
Preparation
- Preheat the oven to 180 °C and grease a round pan with a little coconut oil and sprinkle it with flour to prevent the cake from sticking.
- In a large bowl, mix the flour, dehydrated coconut, sugar, baking powder and salt.
- In another bowl, combine the coconut milk, melted coconut oil and vanilla extract, if using.
- Add the liquid ingredients to the dry ingredients and mix until you get a homogeneous mixture.
- Pour the batter into the prepared pan and level with a spatula.
- Bake the cake for about 30-40 minutes or until a toothpick inserted in the center comes out clean.
- Let the cake cool in the pan for a few minutes before transferring it to a wire rack and letting it cool completely.

This cake, thanks to the dehydrated coconut and coconut milk, will have an intense exotic flavor and a particularly moist and soft texture. Instead of using classic animal-derived ingredients, such as milk and butter, this vegan version opts for plant-based ingredients while maintaining the same pleasurable sensation on the palate.
For an even more Italian touch, you could choose to garnish the cake with vegan dark chocolate shavings before serving. Chocolate and coconut are a winning combination!
