Vegetable Flan
17/11/2023The vegetable flan is a delicious and versatile dish that can be adapted with various types of vegetables depending on the season and personal preferences. Here I will present a basic version that you can customize as you prefer.
Ingredients
- 500 g mixed vegetables (for example zucchini, carrots, spinach)
- 3 eggs
- 100 g grated cheese (Parmesan or Pecorino)
- 100 ml fresh cream
- Salt and pepper to taste
- Butter and breadcrumbs for greasing and coating the mold
- Nutmeg (optional)
Preparation
- Clean and cut the vegetables into uniform pieces. If using carrots or other hard vegetables, it may be necessary to lightly boil them beforehand to soften them.
- Beat the eggs in a large bowl and add the grated cheese, cream, salt, pepper and a pinch of nutmeg if you like.
- Add the vegetables to the egg mixture and mix well to combine them.
- Prepare a flan mold by greasing it with a little butter and dusting it with breadcrumbs. This will help unmold it more easily after cooking.
- Pour the vegetable and egg mixture into the mold.
- Bake in a preheated oven at 180 °C for about 30-40 minutes or until the flan is golden and well set.
- Let it cool slightly before gently unmolding onto a serving plate.
For an even more Italian touch, try including ingredients like porcini mushrooms or asparagus in your flan when in season, and perhaps add a bit of ricotta to the mixture to make everything creamier and lighter.
Trivia
The flan lends itself to numerous variations and can also include fish or minced meat to enrich it. Furthermore, you can serve it both hot and cold, making it suitable for buffets and aperitifs.
