White Chocolate Glaze
17/11/2023Here is the recipe for a classic white chocolate glaze, usable for decorating desserts like cupcakes, cakes, and cookies.
Ingredients
- 150 g of good-quality white chocolate
- 50 ml of fresh cream (or whipping cream)
- 15 g of butter (optional, to add shine)
Preparation

Start by cutting the white chocolate into small pieces or grating it, to make it easier to melt.

Pour the cream into a saucepan and heat it until it starts to approach the boiling point, but be careful not to let it boil.

Remove the cream from the heat as soon as it starts to show the first signs of boiling and add the chopped white chocolate. Let it melt for a minute and then start stirring gently with a spatula, until you obtain a homogeneous and smooth mixture.

(Optional) Add the room-temperature butter and stir until it has completely melted into the glaze. This step is recommended if you want a shinier and richer finish.

Let the white chocolate glaze cool slightly until it reaches the desired consistency. If you want it thicker to cover a cake, let it cool a bit more. If instead you want a more fluid consistency to glaze small pastries, you can use it a bit warmer.
