White Chocolate Semifreddo

Here is the recipe for white chocolate semifreddo, a fresh and indulgent dessert that will certainly satisfy lovers of creamy and rich sweets.

Ingredients

  • 200 g white chocolate
  • 300 ml fresh whipping cream
  • 3 egg yolks
  • 100 g sugar
  • 1 packet of vanillin (or the seeds of 1 vanilla pod)
  • 50 ml milk

Preparation

  1. Start by melting the white chocolate in a double boiler or in the microwave. To do it in a double boiler, place the chocolate in a heat-resistant bowl and set it over a pot with barely simmering water. Make sure the bottom of the bowl does not touch the water. Stir the chocolate until it has completely melted.

  2. Meanwhile, in another bowl, whisk the egg yolks and sugar with an electric mixer, add the vanillin or vanilla seeds, until you obtain a light and frothy mixture.

  3. Heat the milk without bringing it to a boil and add it gradually to the egg yolk and sugar mixture, continuing to stir.

  4. Gently incorporate the melted white chocolate into the egg yolk, sugar, and milk mixture, stirring until you obtain a homogeneous mixture.

  5. Whip the fresh cream until it is firm but not too stiff. Then incorporate it into the rest of the mixture with gentle movements, from bottom to top, to avoid deflating it.

  6. Pour the mixture into a loaf pan lined with plastic wrap or into individual semifreddo molds. Level the surface and cover with an additional layer of plastic wrap.

  7. Place the semifreddo in the freezer for at least 6 hours, preferably overnight.

Serving:

Before serving, let the semifreddo sit at room temperature for about 10-15 minutes to make cutting easier. You can garnish it as desired with dollops of whipped cream, chocolate shavings, fresh fruit, or a berry coulis.
