White Lasagna with Zucchini and Shrimp
17/11/2023Here is the recipe to prepare delicious white lasagna with zucchini and shrimp, a dish that pairs the sweetness of zucchini with the delicate flavor of shrimp in a very creamy white version.
Ingredients
- 250 g egg lasagna sheets (fresh or dry that require pre-cooking)
- 300 g peeled shrimp
- 3 medium zucchini
- 250 ml béchamel sauce (you can make it or buy it ready-made)
- 1 garlic clove
- Extra virgin olive oil
- Salt and pepper to taste
- 150 g mozzarella (or fior di latte) cut into cubes
- Grated Parmesan to taste
- Chopped parsley (optional, for garnish)
Preparation
- If using lasagna sheets that require pre-cooking, boil them in plenty of salted water following the package instructions, then drain and lay them on a clean kitchen towel.
- Clean the zucchini and slice them into thin rounds or strips with a vegetable peeler. In a skillet, sauté the garlic clove in oil, then remove it and add the zucchini. Sauté until tender, then season with salt and pepper and set aside.
- In the same skillet, quickly cook the shrimp with a drizzle of oil, just until they turn pink. Lightly salt them and set aside.
- Lightly grease a baking dish with oil or butter. Start with a layer of lasagna sheets, then spread some béchamel over them, distribute zucchini and shrimp, add a few mozzarella cubes, and sprinkle with Parmesan.
- Add another layer of lasagna sheets and repeat the process until all ingredients are used, finishing with béchamel, mozzarella, and Parmesan.
- Bake at 180 °C for about 20-30 minutes or until the surface of the lasagna is golden and crispy.
- Remove from the oven and let rest for a few minutes before serving.
