Yogurt and Granola Piadina

Ingredients for the piadina (for 4 piadinas):
- 250 g tipo 0 or 00 flour
- 50 ml extra virgin olive oil
- 100 ml lukewarm water
- 1/2 teaspoon fine salt
- 1/2 teaspoon baking soda (optional)
For the filling:
- Greek yogurt or other thick yogurt of your choice
- Granola to taste, preferably with dried fruit and seeds
- Honey to sweeten (optional)
- Fresh fruit (such as strawberries, banana, blueberries, etc.) to add freshness and flavor
Preparation
- In a bowl, pour the flour and make a well in the center. Add salt, baking soda (if using), and olive oil.
- Gradually pour in the lukewarm water, beginning to knead with your hands to incorporate all the ingredients.
- Work the dough on a work surface until you obtain a smooth and elastic ball. If the dough is too dry, add a little water; if it is too wet, add a bit of flour.
- Cover the dough with a damp cloth and let it rest for about 30 minutes.
- Divide the dough into 4 equal parts and roll out each piece with a rolling pin until you obtain a disk about 20-25 cm in diameter.
- Heat a non-stick pan and cook each piadina for about 2 minutes per side, until they puff up and the typical bubbles appear.
- Once ready, spread a generous amount of yogurt over half of the piadina.
- Add the granola on top of the yogurt, honey if you want an extra touch of sweetness, and the fresh fruit cut into pieces.
- Fold it in half to enclose the filling, and serve immediately to enjoy all the crunchiness of the granola.
