Yogurt and Granola Piadina

Preparation

  1. In a bowl, pour the flour and make a well in the center. Add salt, baking soda (if using), and olive oil.
  2. Gradually pour in the lukewarm water, beginning to knead with your hands to incorporate all the ingredients.
  3. Work the dough on a work surface until you obtain a smooth and elastic ball. If the dough is too dry, add a little water; if it is too wet, add a bit of flour.
  4. Cover the dough with a damp cloth and let it rest for about 30 minutes.
  5. Divide the dough into 4 equal parts and roll out each piece with a rolling pin until you obtain a disk about 20-25 cm in diameter.
  6. Heat a non-stick pan and cook each piadina for about 2 minutes per side, until they puff up and the typical bubbles appear.
  7. Once ready, spread a generous amount of yogurt over half of the piadina.
  8. Add the granola on top of the yogurt, honey if you want an extra touch of sweetness, and the fresh fruit cut into pieces.
  9. Fold it in half to enclose the filling, and serve immediately to enjoy all the crunchiness of the granola.
