Zucchini Puff Pastries

Ingredients
- 1 roll of rectangular puff pastry
- 2 medium zucchini
- 100 g of spreadable cheese (such as Philadelphia)

- 1 egg for brushing

- Extra virgin olive oil
- Aromatic herbs to taste (for example, thyme or basil)
Preparation
- Preheat the oven to 200 °C.
- Wash the zucchini and slice them thinly with a mandoline or a sharp knife.
- In a pan, heat a drizzle of oil and sauté the zucchini until they are soft but still al dente, for about 2-3 minutes. Season with salt and pepper to taste.
- Roll out the puff pastry and cut it into rectangles or squares of similar sizes.
- Spread a little spreadable cheese on each piece of puff pastry, leaving a free border around.
- Sprinkle a handful of Parmesan over the spreadable cheese.
- Distribute the zucchini over the cheese.
- Brush the edges of the puff pastry with the beaten egg.
- Bake on the middle rack for 15-20 minutes or until the pastries are golden and puffed.
- Remove from the oven and let cool slightly before serving.
You can garnish your puff pastries with chopped aromatic herbs to add a touch of freshness. Serve them warm to enjoy them at their best.
